We love serving this bright green dressing in a myriad of ways: drizzled over a grain bowl, as a starter alongside plenty of sliced fresh veggies (try it with raw fennel!), and, of course, as a salad dressing.
While our recipe calls for fresh parsley, you can swap in whatever herbs you have on hand, just make sure they're the tender kind (like basil and tarragon) and not hardier ones like rosemary or thyme. If you're short on herbs, you can also swap in some baby spinach, which will contribute plenty of green color and nutrients. To make this recipe vegan, swap in your favorite vegan mayo and sour cream (or plain yogurt) alternative.
We hope you love this recipe as much as we do!
Ingredients
- 2 cups fresh parsley (leaves and stems)
- 3 Tbsp. mayonnaise
- 2 Tbsp. sour cream
- 1 Tbsp. lemon juice
- 1 Tbsp. Wild Green Goddess Seasoning
- ½ tsp. salt
- Cold water, as needed
Directions
- Combine all ingredients in a blender and puree until smooth. If needed, add a small splash of water to get mixture moving.
- This dressing is best served right away but can be refrigerated for up to one day. Transfer to a bowl and press a piece of plastic wrap onto the top to keep out air; this will help preserve its bright green color.
