A wild and wonderful take on Summer Watermelon Salad with a sweet and tart golden dressing. A true refreshing summer delight!

We love watermelon salad in any form and with any ingredients. Its sweet juiciness and punchy flavors bring any summer picnic or cookout to life. We thought we could never improve upon this culinary delight...until now!
This Pure Fire Golden Milk dressing is what puts this beautiful summer salad right over the top. It adds a little heat, a little earthiness, and a lot of flavor. Top with some toasted golden pepitas for a little crunch and a lot of wow factor. The greens we used are all wild lettuces from the Well Seasoned Table farm, but you could use just arugula for a peppery flavor contrast.
Give this a try at your next cookout. It will be a hit!
8 c. Fresh Watermelon chunks
2 c. Wild greens (arugula, purslane, amaranth, violet leaves, wood sorrel, etc)
1 c. Toasted pepitas (toss in Golden Milk and toss for more flavor!)
1/2 c. Lemon juice
2 Tb. Honey
2 Tb. Pure Fire Golden Milk
1/2 c. Red onion, thinly sliced
Optional: 1 c. Feta, crumbled
In a large bowl, toss together watermelon, greens, and onions.
In a blender, blend together lemon juice, honey, and Pure Fire Golden Milk.
Pour dressing over the watermelon mixture and toss. Let soak for 30 min to 1 hour for full flavor. Put in serving dish and sprinkle toasted pepitas over. Serve!
