Here at the Well Seasoned Table farm, we love any excuse to celebrate. For our founder, Sarah's birthday, we knew we had a make a special signature cocktail for the night. 


This new Empress 1908 Indigo Gin is so beautiful and special, it made the perfect base! This gin is infused with butterfly pea flower, which is a gorgeous blue color. But it turns bright purple/pink when acid (like lemon juice) is added to it! What started as a dark blue cocktail turned out to be this electric pink color, a perfect cocktail to celebrate an empress's birthday! 


We served this with a variety of summer salads on a warm summer evening. Laughter, stories, music, and good food were abundant! But this beautiful and delicious cocktail, featuring our Lemon Meringue Sugar,  really made it feel like a celebration.

Ingredients

  • 1 1/2 oz. Well Seasoned Table Lemon Meringue Sugar

  • 1 1/2 oz. Hot water

  • 7 oz. Empress 1908 Indigo Gin

  • 2 oz. Lemon juice

  • 2 Tb. fresh Blackberries

  • 1 can plain Seltzer water

  • More Lemon Meringue Sugar for sprinkle on top

Directions

  1. In a liquid measuring pitcher, mix Lemon Meringue Sugar and hot water until the sugar is melted, to make simple syrup.

  2. To the same pitcher, add all ingredients except blackberries.

  3. Put the blackberries and about 1/2 cup of mixer into the small blender. Blend together and then strain out seeds.

  4. Add back into main pitcher. Stir all ingredients together well.

  5. Fill two glasses with ice, pour cocktail mix over, and top with a sprinkle of more Lemon Meringue Sugar.

  6. Optional: serve with a splash of rainbow sprinkles or a cocktail umbrella!
