2 c. Heavy cream or half-and-half
2 c. Water
1 ¼ c Stoneground Grits (not instant)
1 Tb. Butter
1 tsp. Magic Garlic Dust
1 tsp. Wild Green Fire Goddess
12-15 med-large Shrimp, peeled and deveined
1 Lime, juiced and zested
1 tsp. Wild Green Fire Goddess
1 tsp. Magic Garlic Dust
4 strips Bacon (thick cut)
1 Tb. EVOO (or more as needed)
½ Red onion, small diced
½ Red bell pepper, diced
1 c. Cherry tomatoes, halved
¼ c Dry Vermouth, white wine, or chicken broth
Grits: Bring heavy cream and water to a boil in a medium saucepan. Gradually stir in grits and cook, stirring frequently, until tender, 20 to 30 minutes. Stir in butter, Magic Garlic Dust, and Wild Green Fire Goddess Seasoning and cover to keep warm.
Shrimp: In a bowl, combine shrimp, lime zest and juice, Wild Green Fire Goddess Seasoning, and Magic Garlic Dust. Let sit while you move onto the next step.
Cook bacon in a large skillet over medium heat until crispy. Transfer bacon to a paper-towel-lined plate and pour off all but about 1 teaspoon fat. Add oil to pan, followed by shrimp, and cook until pink and opaque. Remove shrimp from skillet and cover to keep warm.
Add onion and pepper to pan and cook until softened, about 5 minutes (if pan looks dry, add a bit more oil). Stir in tomatoes, then add vermouth and use a wooden spoon to scrape up browned bits on bottom of pan. Continue to cook until tomatoes have burst and mixture is saucy, 5 to 10 minutes.
Reduce heat to low, then stir shrimp into sauce to rewarm. Divide grits among bowls, top with shrimp mixture, and crumble bacon over top.
