1 c. Bulgar wheat
1 ½ c Water
1 tsp. Vegetable stock base (such as Better than Bouillion)(optional)
2 c. Tomatoes, diced
2 c. Parsley, chopped fine
1 bunch Green onions, chopped (green and white)
½ Red onion, diced small
2 Garlic cloves, minced
2 Tb. EVOO
2 Tb. Lemon juice
2 tsp. Appalachian Lemon Sea Salt
Place bulgur in a heatproof bowl and set aside. In a small saucepan, combine water and vegetable stock base (if using) and bring to a boil. Pour over bulgur and let sit until tender, 20 to 30 minutes.
In a large bowl, combine tomatoes, parsley. green onions, red onion, and garlic. Add bulgur and toss well to combine.
Add olive oil, lemon juice and Appalachian Sea Salt and toss again. For best results, let sit 15 to 20 minutes before serving.
