Imagine this: perfectly al dente pasta coated in a dreamy *Magic Onion* sauce that's a flavor explosion without the fuss. It's the kind of dish that has the power to turn a regular Tuesday into a mini celebration. I'm talking about comfort food level 1000, without sacrificing your precious Netflix binge time.
So, kick off those shoes, put on your favorite tunes, and let's dive into the magic of creating a dinner that's gonna have the whole crew singing your praises. No gourmet skills needed – just good vibes and a hunger for something delicious. Let's get this pasta party started!
12 oz. Medium shell pasta
2 Tb. Butter
½ lb. Ground sausage
1 Red onion (small), diced
2 cloves Garlic, minced
½ c. White wine, vermouth, or chicken stock
2 c. Chopped Kale or Spinach
1 ½ c. Cottage Cheese (we prefer full fat)
1 Tb. Magic Onion Dust
Cook pasta in a pot of boiling, salted water until al dente; drain and set aside.
Meanwhile, melt 1 Tbsp. butter in a large skillet over medium-high heat. Add sausage and 2 tsp. Magic Onion Dust and cook, stirring frequently, until sausage is well browned.
Add remaining 1 Tbsp. butter, onion, and garlic and cook until onion is tender and sausage is cooked through, about 5 minutes. Add wine or chicken stock and use a wooden spoon to scrape up any browned bits on bottom of pan. Stir in greens and cook until beginning to wilt, about 2 minutes.
Stir pasta into skillet, followed by cottage cheese. Cook, stirring constantly, until well mixed and cottage cheese begins to melt. Season with remaining 1 tsp. Magic Onion Dust and serve.
