Pumpkin Harvest Bake
Just as cool winds start to blow in, the mountains and valleys surrounding us take on hues of gold, red and orange! It’s such a sight to see and it’s when we head to our local farms for pumpkins. Nothing says fall more than dinner in a pumpkin and this recipe will bring you the deepest fall vibes no matter where you call home!

Ingredients
- 1 small pie pumpkin
- 1 medium sweet potato

1/2 pound lean ground protein (we used Hickory Nut Gap Ground Beef)
- 1 whole yellow onion
- 2 medium sweet heat Italian peppers
- 4 small mild yellow and orange peppers
- 5-6 sliced shitake mushrooms

2 1/4 heaping teaspoons Spice of Life (reserve the 1/4 tsp. for your garlic honey finish)

Pinch of salt to taste

1 tbsp high heat oil (we used avocado oil)

2 tbsp raw garlic honey (regular honey is fine also)
Directions
Preheat your oven to 375
Cut your pumpkin in half. Rub some avocado or olive oil and salt on the rim. Turn the halves upside down on a baking sheet with a lip. Bake for 45min.
Wash and prep sweet potato and add it in the oven on its own pan, same temp as the pumpkin but leave it in for 1 hour or so- until tender when inserting a fork.
While everything is cooking, take your 2 tablespoons of garlic honey (or honey) and mix in that reserve 1/4 tsp Spice of Life. Set it to the side.
Remove pumpkin from oven after 45 minutes. Set pumpkin in pan on cooling rack while preparing your other ingredients. Reset your timer for 15 more minutes for the sweet potato.
In a sauce pan on medium heat, add your oil, stir in slice shrooms, chopped peppers and ground beef and then…sprinkle your SPICE OF LIFE SEASONING all over and give it a stir.
While those ingredients are melding, flip your pumpkin halves over, scoop and discard your seeds and pulp. Then remove the flesh from the pumpkin halves and toss it in your stirfry a few minutes before you remove from heat.
Remove your sweet potato from oven. Carefully cube it (remove skin if you don’t want it).
Stir in the sweet potato
Add salt to taste.
Stuff pumpkin halves with the goodness!
Bake for 10 min or so just to bring everything to together and to temp ( you could always add a little cheese before finishing it off in the oven. - we recommend a gruerye or havarti . (Creamy with subtle flavor)
Remove from oven.
Drizzle Spice of Life / Garlic Honey Finish all over the top.
Garnish with herbs / edibles flowers if on hand
