Well Seasoned Chicken Fajita Bowl
When I meal prep, I like to make simple dishes that I can serve or eat in a number of ways. For instance, these Chicken Fajitas, kicked up with our Taco Seasoning, can be eaten with tortillas and lettuce, as actual fajitas. Or, you can get a little creative and put together these gluten-free Chicken Fajita bowls (like a burrito bowl!). The warm organic spices in our Taco Seasoning (or the WST House Grinder) really bring this dish to life. And paired with a zingy cilantro lime jasmine rice, you've got yourself a quick and delicious weekday family meal!

It contains just fresh, organic herbs and spices, which bring any dish to life and leave you feeling good. There is something about the freshness of the lime and cilantro in the rice, paired with the slight heat of these fajitas that really makes a delicious dinner pairing. 1 c. Jasmine Rice
1 1/2 c. Water
1/4 c. Cilantro, roughly chopped
1 lime, zested and juiced
1 lb. Chicken breast, sliced into strips
1 medium Zucchini, halved and sliced
1 medium Yellow Squash, halved and sliced
1 Bell Pepper, medium dice
1/2 Red Onion, medium dice
1 pint Cherry tomatoes, halved
2 Tb. Well Seasoned Table Taco Seasoning (or more to taste)
Optional: 1 Tb. Well Seasoned Table Magic Garlic Dust
In a medium saucepot, bring the water and a pinch of salt to a boil.
Add jasmine rice to the pot and simmer on low, covered, for about 20 minutes or until tender.
Meanwhile, in a large sauté pan, heat about 2 Tb. oil. Add in chicken, peppers and onion, zucchini, and squash.
Sauté chicken and vegetables for about 15 minutes on medium heat, or until chicken is cooked through and vegetables are fork-tender and fragrant.
To cooked rice, add a pinch of lime zest, lime juice, and as much chopped cilantro as desired. Salt and Pepper to taste.
In large salad bowls, arrange a scoop of rice, chicken fajitas, and a scoop of tomatoes.
For a creamy topper, try stirring together some sour cream, taco sauce, and a little Well Seasoned Table Cuban Seasoning, and drizzle over!
