If you know anything about good Southern cooking, you know that a cast-iron pan is a must! If you go into someone's kitchen and they have a cast-iron pan on their stovetop, chances are they know what they're doing in the kitchen! A well-seasoned cast-iron is the first step to a Well Seasoned Table. And the best thing about a good cast-iron is that it creates the perfect browned crust on meat! These bone-in pork chops are an example. 


These pork chops are amazing just from the method, the Maillard reaction creating a perfect juicy caramelized coating. But they are made even more amazing with this combination of organic spices from Well Seasoned Table. The Magic Chili Pepper Blend mixed into a little oil adds heat and flavor complexity. While the Cuban Seasoning is so toasty and fragrant (it's a favorite of ours!). Somehow the farm-grown cumin, coriander, and chili peppers blend together to create a flavor explosion that perfectly complements the juiciness of the pork. There is just something about farm-fresh, small-batch spices that really put any dish over the top!

Ingredients

  • 2 bone-in Pork chops

  • 1 Tb Coconut oil

  • 1 Tb. Tamari

  • 1 Tb Well Seasoned Table Magic Chili Pepper Blend, mixed into 2 Tb. EVOO

  • 2 tsp Well Seasoned Table Cuban Seasoning

Directions

  1. Preheat oven to 300 degrees.

  2. Coat pork chops with Cuban Seasoning on both sides.

  3. In a cast-iron pan, add coconut oil. Melt down and warm up the pan on medium heat.

  4. Add pork chops to pan and brown on one side, until the pork chops release easily from the pan.

  5. Flip the chops over and spoon the Magic Chili Pepper Blend oil over the top of them.

  6. Brown thoroughly on the other side, spooning the oil and drippings over the chops. Add tamari to the pan and keep spooning over the chops.

  7. Place the entire pan in the oven and bake at 300 degrees for 30 to 45 minutes or until the center is 145 degrees.

  8. Let pork chops rest for 10 minutes and serve. They should be super juicy and tender. Yum!
