Kale Caesar Salad...so trendy. I feel hip just typing out this recipe (pushes up nerd glasses). But all joking aside, I do love a good kale Caesar, and I have had many of them. All over. But this one...this takes the cake, and here's why.
Golden Milk. That warming, silky beverage that gives a nod to Ayurveda. It is delicious, good for digestion, and helps move inflammation out of your body. It makes you feel good, sleep well. The Well Seasoned Table Pure Fire Golden Milk is next level! It has powderized fire cider mash, which is so good for so many things. Your immune system and gut will thank you for starters, plus it warms your whole body up. This spicy take on Golden Milk will make you feel cozy all over. So, we decided why not kick up our Caesar dressing with it!?
Not only is this salad simple, filling, and outstandingly tasty, it makes you feel good all over. The Pure Fire Golden Milk stains the apples this gorgeous golden color, making this salad an Autumnal feast for the eyes! This is the perfect main dish salad, or as a nutritious start to your family or holiday meal. Top it with our Crispy Chickpeas for a real treat!
2 Tb. Veganaise (or mayonnaise if you prefer)
1 Tb. Lemon juice
1 clove Fresh garlic
2 Tb. Nutritional yeast
1 Tb. Tamari
2 Tb. Red wine vinegar
1 1/2 Tb. Well Seasoned Table Pure Fire Golden Milk, plus 1 Tb. for pepitas
1 tsp. Honey
8 - 10 c. Curly Kale
1/2 c. Dried cranberries
1/2 c. Pepitas
1/4 Red onion, thinly sliced
1/2 Red apple, medium dice
In blender, blend all dressing ingredients until fully incorporated. Be sure to save the extra 1 Tb. Golden Milk aside.
Wash kale and cut or tear into small pieces.
Soak dried cranberries in hot water for 15 minutes to plump up; drain well.
Roast pepitas in 350 degree oven until just hot. toss in 1 Tb. Pure Fire Golden Milk powder to coat.
In large bowl, mix all salad ingredients. Reserve a few apple chunks, pepitas or cranberries to sprinkle over the top, if desired. Drizzle dressing over the salad, 1 Tb. at a time, while massaging into the kale. Dress to taste. It's possible you will have a little extra dressing. It will stay fresh in the refridgerator for up to 3 days.
Arrange salad on serving platter, topping with extra apples, pepitas, or cranberries, as needed.
