Campfire Marshmallow Cereal Bars

A fun take on Rice Crispy Treats, our Campfire Marshmallow Cereal Bars are sure to be a hit at any summertime birthday party or campfire gathering! Our summer seasonal, Campfire Hot Chocolate, is the star of these cereal bars. Together the smoky hot chocolate and perfectly gooey bars make a perfect pair.
Campfire Marshmallow Cereal Bars

Ingredients
- 5 Tbsp. unsalted butter
- 15 oz. marshmallows, divided
- 6 cups crisped rice cereal
- 2 to 3 Tbsp. Campfire Hot Chocolate
- 1/2 tsp. salt
Directions
- 1. Line a 9x13" baking dish with parchment paper, then brush with melted butter or coat with cooking spray.
- 2. Melt butter in a large saucepan over medium heat. Continue to cook, swirling pot and stirring with a rubber spatula, until golden and nutty smelling, about 3 more minutes.
- 3. Immediately remove pot from the heat and stir in 3/4 of marshmallows until melted. Stir in cereal, hot cocoa, and salt until well combined, then stir in remaining marshmallows.
- 4. Working quickly, scrape into prepared pan and sprinkle with chocolate chips (if using). Gently flatten with a spatula, but avoid pressing too firmly as it can cause bars to become hard. Let sit at room temperature until firm and set, about 1 hour, before serving.
