Although the history of the classic Mojito drink is in dispute (see a snippet of the history here), what is widely known is that this is one of the most refreshing and simple summer cocktails. The cooling properties of farm-fresh mint, the tang of fresh lime, and high quality sparkling water are the basics. Add in a splash of white rum and a simple syrup made from our Blue Ridge Sugar, and you've got a beverage worthy of a celebration!
For this recipe, we collaborated with sparkling water company, Splendor. Their mineral-rich water goes straight from Cotopaxi to the bottle, "ensuring ultimate purity and hydration". It's clean, crisp taste was the perfect addition to our Appalachian twist on this cocktail.
Although the original cocktail was made with pure cane sugar syrup, we love this Blue Ridge twist, with our Blue Ridge Sugar. This gorgeous and flavorful sugar is infused with blueberries and lemon from Devil's Foot Beverage Company, as well as lavender and butterfly pea flowers. The subtle berry and floral flavor makes the mint and lime sing! This will surely be your new favorite summer cocktail, or mocktail!
1 oz. Blue Ridge Sugar
1 oz. Hot water
1 ½ oz. White rum
2-4 fresh Mint leaves
2-4 fresh Lime wedges
Ice, as needed
Sparkling water, as needed
Add Blue Ridge Sugar to hot water and stir to dissolve.
In the bottom of a highball or pint glass, add mint leaves and lime wedges. Add in 1 oz. Blue Ridge simple syrup and muddle together well.
Top glass off with ice.
Pour over white rum.
Pour over sparkling water.
Garnish with more lime wedges or mint leaves as desired.
