Pineapple Margarita with a Sweet & Spicy Sugar Rim
I. Love. Happy. Hour. It truly makes me happy. I love the concept that there is a portion of the day blocked off simply for things that make you happy. Tapas, cocktails, laughter with friends, relaxation. That is what it's about.
Not to get too sappy about this, but we aren't always very good at relaxing. We think that we have to earn relaxation. We have to earn ease, time to ourselves, time with friends. That having a drink on a patio with someone you love is a reward for hustling all day. I am here to tell you that that is a reward for just existing. And you have permission to do that any time you want.
One of my favorite things when I lived in Denver, CO was happy hour drinks with friends. There was one restaurant in LoDo that had so many different margaritas. It was pure, unadulterated happiness, joy, and deliciousness. What a great way to add zest to your life! So, this recipe is an homage to that experience...a tart, sweet, flavor-packed margarita. With a twist! The WST Candied Jalapeno Sugar is the most incredible rim for this cocktail! It is sweet, spicy, and complex. It takes restraint not to just lick it straight off the glass! Enjoy!
Side note: the WST Tropical Mountain Mango Sugar is also amazing in this!
1 1/2 c Pineapple Juice
3/4 c Orange juice
1 Lime, juiced
4 oz. Blanco Tequila
Well Seasoned Table Candied Jalapeno Sugar, as needed
Mix all liquids in a cocktail shaker until well blended.
Dip the rim of two glasses in a bit of juice to moisten, and then liberally dip into the Candied Jalapeno Sugar. You can rim the whole glass or just one side.
Fill both glasses with ice and pour margaritas!
Sip, enjoy, and relax.
