If you haven't tried elote, or Mexican street corn, you're in for a treat. In our take on the popular snack, which is widely sold throughout Mexico, fresh ears of corn are briefly boiled, then topped with mayo and a sprinkling of parmesan cheese and our spicy Firecracker Dust. Serve them as a side at your next cookout or cut the ears into smaller pieces and serve as a starter or snack.
Ingredients

4 ears corn, shucked

4-8 Tb. mayonnaise

4 Tb. parmesan cheese

Firecracker Dust, as needed
Directions
Drop ears of corn into boiling water and cook until fork tender, 5 minutes. Take out and cool.
Smear each ear of corn with 1 to 2 Tb of mayonnaise and then sprinkle with 1 Tb parmesan cheese each.
Liberally sprinkle each ear of corn with Firecracker Dust. The more you add, the spicier it gets!
