Hi there, Well Seasoned Table Fans! My name is Eve and I am addicted to pizza. Currently I live within two blocks of four deliciously different pizza establishments. If I go a few more blocks (either way) add another three or four more. It's truly a problem. My wallet and my acid reflux can't handle the truth of all the delicious dough around me. Recently I've been craving some cheesy goodness, so I decided to try a lighter version (and sneak in some veggies in the process). I present to you my Cauliflower Cheese Sticks.
I've seen several versions floating around the internet. Many have flour or eggs added in. I am sure those are delicious, but this recipe is so simple. It really only requires two ingredients. Well, three, if you include your favorite Well Seasoned Table Seasoning (which you should). Everything else is optional and to taste. I suggest you play around with different cheese and different seasonings to see what combinations you like the best. I played it pretty safe this time and used the WST Garlic & Herb Seasoning.
Next time, (and believe you me, there will be a next time) I will be trying out the Bruschetta Seasoning. Isn't your mouth already watering?! Be sure to let us know which seasoning you made your Cauliflower Cheese Sticks with, but in the meantime, here is how to make my version.
- 2 cups riced cauliflower
- 1.5 cups of cheese (blend of mozzarella and Italian blend)
- ¼ TSP garlic powder
- ¼ TSP salt
- ¼ TSP pepper
- 1 TSP of WST Garlic & Herb Seasoning
The first step is to cook the cauliflower. If you are using frozen riced cauliflower, allow the bag to defrost. Once the riced cauliflower is defrosted place in a microwave safe bow and microwave four 10-15 mins (until soft). While that is cooling preheat oven to 375 and line a cookie sheet or baking pan with parchment paper.
Once the cauliflower has cooled, use several layers of paper towel or cheese cloth to remove as much water as you can. Mix 1 cup of your cheese blend, salt, pepper and ½ TSP of your WST seasoning in with the riced cauliflower. Spread mixture evenly onto parchment paper. Bake for 25 mins or until slightly toasted on the top. Mix remaining ½ TSP of WST seasoning in with remaining cheese and sprinkle on top. Bake for another 5 mins or until cheese is melted and bubble. Enjoy with your favorite pizza sauce!
