Blackened Chicken Alfredo

Looking for an indulgent dinner with a kick? Well, this is the meal for you! Creamy fettuccine alfredo with garlic, kale, and blistered cherry tomatoes. All topped with tender blackened chicken made with WST Blackening Seasoning. Our Blackening Seasoning is made with mash from Pure Fire Foods, and peppers from Smoking J's. Community sourced seasonings...taste the difference.
5 oz pasta
1 chicken breast or 2 thighs
1-2 Tbsp WST Blackening Seasoning
1 Tbsp coconut oil
1 cup kale - thinly sliced
1/2 cup of cherry tomatoes - cut in half

Alfredo Sauce
3 Tbsp Butter
2 cloves garlic
1 cup heavy whipping cream
1 cup parmesan (freshly grated)
Cook pasta (in salted water) until al dente. Reserve 1/4 cup of pasta water.
Tenderize the chicken (put between 2 pieces of plastic wrap and pound out with mallet until 1/2 inch thick). Sprinkle both sides with WST Blackening Seasoning.
Heat coconut oil in skillet until hot (but not smoking). Add chicken breast. Cook for 4 mins on each side. Remove from skillet and set aside.
Once pan has cooled slightly add butter & garlic. Cook on med/low for 3 mins. Add kale & tomatoes and cook for 2 mins. Add heavy whipping cream, and simmer for 2 mins. Add parmesan, and stir until cheese has fully melted. Remove from heat. Add an extra sprinkle of Blackening Seasoning.
Add pasta, and reserved pasta water to skillet. Stir to combine. Put pasta on a plate and top with chicken and extra parmesan cheese.
